Mediterranean Chicken Sausage
We recently took a walk on a rainy day in Toronto and stumbled into a Good Will store were I found inspiration for this dish. I was looking through tonnes of kitchen supplies when I came across a 1976 Jeanette Electric Meat Grinder which was used probably once or twice in it's day and all pieces where there including the original warranty. This was a great vintage find and I remember my mom owning the exact same one when I was younger.
This was the second batch of Sausage I made, the first was an Italian Pork Sausage that turned out quite well. Then I decided to give my Sausage making skills a new twist by creating a Mediterranean Chicken Sausage paired with Rosemary Naan bread and a Marsala Salsa.
I think I've found my new hobby...
Home-made Chicken Fingers and Fries with Cardamon-Fennel Aioli and Moroccan BBQ Sauce
Alright it's been awhile, but here is something I decided to try out using Panko Breadcrumbs. The Chicken Strips were crunchy and the fries were cooked to perfection. The sauces that accompanied this dish came to light because of a "sauce-off" competition I decided to have with Riley. Both Sauces turned out extremely tasty and worked well with the dish. Enjoying this restaurant favorite in your own home is as simple as a stock pot and oil to create a make-shift deep fryer.
